48 Hours

48 Hours. That's all we had with Jer this weekend.
He flew here today:
*Phoenix, Arizona*

Carter and Daddy enjoyed lots of time together this weekend, which made both of them very happy :)
After taking him to the airport, I came home and made this recipe from Farming on Faith. Probably not the best decision to make this when at home alone with a 1 year {meaning I'm the only one around to eat it...}, but it is goooood and ridiculously easy.

HOT CARAMEL APPLE DIP

1/2 cup butter
1/2 cup light corn syrup
1 cup brown sugar
1 can sweetened condensed milk

Mix all ingredients together and put in Crock Pot on low for 3 hours.
Yep, it's that easy! Cut up some apples and dip away :)

Here and There

We're here. For the past few days, my hubby has been out of town and Carter has been sick. He got the cold bug I had last week and has been pretty miserable- runny nose, bad cough, and a fever that comes and goes. In fact, he's been coughing so hard that he's thrown up a few times each day. It's hard watching your little one suffer when there's not much you can do. Thankfully, we've had the help of my family for the moments when I need a break. I'm hoping he's on the mend! In the meantime, I have plenty of laundry and to-do lists to keep me busy.

As I mentioned, Jer is currently here:

Well, he's technically in Jersey City... but close enough. To say that I'm jealous would be an understatement. A HUGE understatement. I'm really hoping to go back with him in December- I mean, is there anything better than New York City at Christmas time?! I think not :)

Mornings

I am so thankful for mornings with my little guy. We usually eat breakfast together followed by a good dose of PBS. His favorite show is still Sesame Street- no surprise.

Oh, and sometimes I have to say "Carter, show Mommy your teeth" to get him to smile, which explains the goofy face :)



Sometimes Mommy lets me have yummy chocolate donuts...

And sometimes I try to do crazy things like crawl under the TV cabinet... and then get stuck...
I know in just a few short years he will be off to school every morning, so I'm trying to enjoy these precious moments while I have them.

A Little of This, A Little of That

Wow, it's been forever since I posted! Somehow the summer has a way of making the time go by so much faster. A few nights ago, I found myself looking at our old blog {jeremyandapril.blogspot.com} and was fascinated by some of the things I had written, especially while I was pregnant, that I don't even remember! I instantly regretted not writing down more of my pregnancy experiences, but even more so- I regretted not keeping better track of Carter's first year. I don't usually blog about our day-to-day experiences because I don't think they are interesting enough or that anyone really cares if we went to Sonic or Publix or the library. Taking a glimpse back has given me a fresh perspective on blogging. Maybe I DO need to be recording the little things that happen here and there because inevitably my memory is going to fail me at some point.

I say all that to say that maybe you'll be seeing more of me on here. And maybe you'll be getting a few too many details about our life, but maybe I need to be doing this for me... and for our little family. So that one day we can remember the little moments that are going by oh so quickly.

Soooo... here's a little of what we've been up to lately:

  • Jeremy's sister, her husband, and three girls came for a visit last week. It had been WAY too long since we'd seen them, and it was good to catch up! We did a lot of good eating... Carrabba's, Dunkin Donuts, Sweet CeCe's...mmm... and even made it to the Williamson County Fair for a few hours!

  • Carter and Jenna trying out a BIG John Deere tractor
  • Jeremy made a short trip to DC at the beginning of the month, so Carter and I had a little sleep over at my parents' house. There will be many more of these to come this fall! Funniest story from that weekend: My mom and I were talking in the family room, while Carter was playing in the kitchen. At one point, he came in and was chewing something and going, "MMMMM" very loudly and trying to get my attention. He clearly wanted me to know that he was eating something good. I paused for a moment, wondering if I had given him something to eat, then realized that I hadn't... uh oh. I went in the kitchen to discover that he had opened my mom's pantry, found a bag of chocolate chips, somehow opened them, and was helping himself to handfuls at a time!!! What can you do but laugh?! And boy did we!! He was so proud of himself and enjoying the "chocolate chippies" very much :) I have this all on video ... if only I could figure out how to upload it!
  • We have made friends with some new neighbors down the street that have two little boys around Carter's age. We see them regularly on our nightly walks and have already had a playdate and taken a trip to the library together. So much fun!

Bringing Up Boys

At first glance, I am the absolute last person who would ever be considered a good "boy mom". I have never played a team sport... in my entire life. I do not like being hot and sweaty. I can't stand bugs and am squeamish around blood ... not to mention... the dreaded... throw up. As a child, I spent most of my days playing "house" with my sister and our massive collection of dolls and stuffed animals. If I wasn't doing that then I was reading books or doing arts and crafts. My idea of playing outside always involved a pool.

Fast forward twenty years or so... and here I am, mother to the most amazing little boy on the planet. A little boy who is ALL boy. He's constantly sweaty and would always rather be outside. His idea of playing outside includes digging up rocks in our yard or eating grass. He has a very short attention span, is constantly moving, does not like to sleep, and sometimes gags himself just to see my horrific reaction. And even at the age of 19 months, he thinks dad is WAY cooler than mom.

I say all this because after reading Bringing Up Boys, I have been given a fresh perspective on raising this amazing little guy. While there are parts of the book that I don't completely agree with, I found the whole of it to be incredibly helpful. Here are a couple of my thoughts along with some of my favorite quotes from the book:

-Boys have distinct physiological qualities (brain structure, hormones, etc.) that make them the way they are... thus making them different than girls. God has given them these qualities for a specific reason!
-The time we have to truly impact our children's lives is so SO short. For these imperative years, it is essential that I make the sacrifices needed in order to give my son a firm foundation on which to stand. If that means I don't get to sleep as much as I'd like or don't keep up with every new tv show/movie/book or have to postpone some of my personal goals, then I'm ok with that. You only get one shot at parenthood.

-There is absolutely NO substitute for spending time with your kids. And "time" doesn't mean sitting at the dinner table together and not speaking... we're talking about quality time here.

-Our society has seriously missed the mark in some areas. Things that should be important aren't, while things of very little value are often what consume us. Living counter-culturally (did I say that right?) isn't necessarily the worst thing in the world- within moderation of couse.

-Boys need their dads. They need healthy role models of masculinity and good examples of what it means to be a strong, Godly father. Sadly, many men don't take their role as "father" seriously anymore.

-"Your task as a mother, in conjunction with your husband, is to build a man out of the raw materials available in this delightful little boy, stone upon stone upon stone. Never assume for a moment that you can 'do you own thing' without serious consequences for him and his sister. I believe this task must be your highest priority for a period of time. It will not always be required of you. Before you know it, that child at your feet will become a young man who will pack his bags and take his first halting steps into the adult world. Then it will be your turn. By all expectations, you should have decades of health and vigor left to invest in whatever God calls you to do. But for now, there is a higher calling... Raising children who have been loaned to us for a brief moment outranks every other responsibility." p. 108

Talk about them when you sit at home and when you walk along the road, when you lie down and when you get up. Tie them as symbols on your hands and bind them on your foreheads. Caramel Corn

Do you love Caramel Corn as much as I do? If so, whip up a batch of this SUPER EASY and DELICIOUS recipe! I'm embarrassed to say that ours was gone in less than 24 hours... so you may want to double it. Also, make sure you only use 6 cups of popcorn (which is actually less than one bag) or you won't have enough caramel sauce to cover it.

6 cups popped corn
1/2 cup brown sugar
1/4 cup unsalted butter
2 Tablespoons corn syrup
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon baking soda

Preheat oven to 300 degrees. Combine sugar, butter, salt and corn syrup in a pan and melt. Stir in vanilla and baking soda.

Pour over popped corn and bake for 10 minutes. Allow time to cool and harden before serving! ENJOY! :)
